Red food colouring is concentrated, so it won't change the consistency of your batter or frosting. For bright red, try starting with Snow White buttercream or an all-shortening buttercream for a true pop of colour; can also be used with traditional buttercream. Use individually or mix with other gel food colouring to achieve new shades. For a deep dark red, try making your buttercream a dark pink then add your red and let the colour develop.
